Maybe you don't need to buy new knives?

Cheap knives don't hold their edge well though due to the lower grade of steel (which is really what you're looking for in a good knife). So sharpen a cheap knife, and it'll cut well for while, but it'll loose its edge. A more expensive knife might not cut any better than a sharpened cheap knife, but may last longer before it needs to be re-sharpened. So when you buy knives, it's more about balancing cost versus how often you need to sharpen it (or, if you don't sharpen your knives, how often you need to replace it). So $1 knives are actually great value for occasional users of knives and people who cook rarely; but a pain in the ass for frequent cooks and chefs - who wants to spend $1 but have to spend an hour every few days re-sharpening all their knives just so it cuts well?
