He shuffles it so fast that you don't get a chance to memorize the one of the cards you see before the last card appears which is the 10 of spades

At the beginning of his trick, he shows the Queen of Spades, flips the card and the 10 of Hearts appears. This sticks in your subconsciousness. Note the 10 and the spades! And as 1GuyGuy said: The 10 of Spades was the last card. Because of that and recognizing the 10 and the spades subconsciously, you'll get a "good feeling" of picking the 10 of Spades.
