At 4:05 he flips over half the deck because before that he was sorting the cards carefully with his fingers on the bottom of the deck. He skipped the two target cards. Smoothly performed, and the flipover wasn't visible to the two people watching perched on those high chairs. We get to see it because we have a front-facing camera angle.
