According to Coke's website, the freezing point of regular Coke is about 30 degrees Fahrenheit at standard atmospheric pressure. Anybody who remembers those phase diagrams from high school chemistry can notice that pressure will lower the freezing point. So you cool the coke low enough that it is below it's freezing point at 1 atmosphere, but not so cold it freezes in the bottle at whatever that pressure is. When you open up the bottle, you lower the pressure, which lowers the freezing point. Taking a swig lowers the pressure further and starts agitating the liquid. Turning it upside down further agitates the liquid, which can now be considered super-cooled, and it "spontaneously" freezes. A clever trick!

You can do this on your own freezer, just monitor the temp...ive sceen it done with beer, where its liquid, they hit it, and it freezes completely solid...i nice trick, great way to get them sold, clever of coke!

Very cool machine. Not exclusive to HK though, we have this machine in Brisbane, Australia. It's at the Night Owl in Brunswick St if anyone wants to try!
